假扮柚子的金桔芝士上海月饼 cheesy shang hai moon cake

想做月饼,可是有没有月饼模。所以就做了这款不用模的月饼 - 芝士上海月饼。


材料(可作8粒)

120g 牛油 butter
40g 细糖 castor sugar
1 1/2 tbsp 牛奶 milk
2 tbsp 芝士粉 cheese powder
1 tbsp 蜀粉 corn flour
180g 低筋面粉 low protein flour

245g 莲蓉 lotus paste
4 粒咸蛋 salted egg

先处理咸蛋,把蛋白丢掉,剩下蛋黄,倒入一点麻油,蒸5分钟。
Steam salted egg with some sesame oil for 5 minutes.


把莲蓉分成8等分,大概一个35g,包入一个咸蛋。
Divide lotus paste to 35g each and wrap a salted egg inside.


把牛油,糖,牛奶打匀。加入芝士粉,蜀粉,低筋面粉搅拌成面团。用保鲜膜盖着,放进冰箱30分钟。
Beat butter, sugar and milk till creamy and add in cheese powder, corn flour and low protein flour, combine to form a soft dough. Cover with cling wrap and chill in fridge for 30 minutes.


半小时后,把面团平均分成8等分,大概一个45g,包入莲蓉馅料,搓成圆形。然后把它们送入烤箱先用180度烤个10分钟,再拿出来放凉点,刷上蛋黄,又再一次烤个20分钟。
Take dough out from fridge and knead dough to smooth. Divide dough into 8 round balls weighted 45g each. Flatten dough with palm and wrap up the lotus paste filling into it and shap it like into round shap then place on baking tray. Bake at preheated oven at 180c for 10 minutes. Remove from oven and leave it slight cool then lightly brush the surface with egg wash and bake for another 20 minutes.


我本来是想把它们塑造成柚子,就插了丁香当成枝,南瓜籽当成叶。
没想到因为金黄金黄色的,看起来竟然比较像金桔。
Decorate with cloves and pumpkin seed. 


出炉啦!


迫不及待切开,哇,咸蛋黄!


杉杉平时就喜欢吃orange,一看到就大喊:我要吃orange!


切了一小片给她,她一口接一口直接嗑完。
